  • Pentol Aci:

    125 g tapioca flour

    125 g flour

    2 g white pepper powder

    7 g leek, thinly sliced

    5 g chicken stock powder

    3 g salt

     

    150 ml hot water

     

    Ground Spices:

    200 g big red chili

    200 g red cayenne pepper

    100 g red tomatoes

    10 g ginger

    35 g shallots

    30 g garlic

    15 g candlenut

    40 g brown sugar

     

    Seasoning:

    5 g salt

    25 g chicken powder

    4 g MSG


    200 ml water
    250 g cooking oil

Pentol Setan (Chilli Meatballs)

Pentol Setan is a type of snack which can be found in Subarabaya and Sidoarjo, towns in East Java. It is similar to meatballs. The pentol traders usually sell them using a cart, motorbike, or bicycle, and are highly sought after by communities, especially school kids because of the affordable price.

Instructions

  1. Making Pentol

    • In a mixing bowl, add the Pentol Aci ingredients and mix. Then add the hot water slowly a little at a time while continuing to stir. Mix until the dough is smooth. 

    • Portion the dough into 10 g pieces and roll them into balls. Boil the aci pentol until it floats. Remove, drain, and set aside.

  2. Making Pentol Setan

    • Puree the ground spices ingredients into a paste.

    • Saute ground spices until cooked or reddish and oily. Then add the seasoning and stir until everything is well mixed. Add the water.

    • Once everything is mixed and cooked, add the aci pentol balls, and stir until evenly mixed. Cook until the water is dry and the spices are absorbed. Turn off the heat.

Plate and Serve!

Prepare a serving bowl, then transfer the Pentol Setan into the bowl and serve.
