    5 cloves Garlic

    2 tbsp Lime Juice

    Sambal ingredients:

    50 g Curly Red Chilies

    10 g Red Cayenne Pepper

    20 g Garlic

    35 g Shallots

    2 pieces Red Tomatoes

    5 cloves Candlenut

    Seasoning:

    10 g Brown Sugar

    1 tsp Sugar 

    1 tsp Salt

    1 tsp flavoring powder

    2 tbsp sweet Soy Sauce (optional)

What is Indonesian cuisine without Pecel Lele? Across Indonesia, you will always find a roadside stall with iconic banners of hand-drawn catfish and other protein variants, like chicken or duck, to depict this popular dish. Known as a cheap and comforting option, Pecel Lele usually consists of deep fried catfish served with a warm plate of rice, cabbage, cucumber, basil leaves, and of course, the quintessential tomato-based sambal on the side.

Instructions

  1. Make spice blend

    • With a blender, blend turmeric, coriander and garlic until smooth. 
    • Give the fish a good rub with the seasoning.
    • Squeeze some lime juice over it and set aside.

  2. Fry spice paste

    • In a pan, stir fry the red chilies, cayenne pepper, garlic, shallots, tomatoes and candle nut until fragrant.
    • With a blender or pestle or mortar, coarse grind the sauteed paste, brown sugar, sugar, salt, chicken powder and sweet soy sauce (optional).
    • Set aside


  3. Fry fish

    • In a frying pan, fry the fish until cooked or golden brown.

    At the time of cleaning the fish, try to clean it completely so that the fish does not smell fishy because catfish can be slimy and have a slightly stinging fishy smell, if you like sweet soy sauce, then you can add another 1-2 spoons of soy sauce. This catfish pecel is usually served with some fresh vegetables and is also added with tofu or fried tempeh.
