    15 ginger, crushed

    5 kaffir lime leaves

     

    Ground spices:

    20 g shallots

    20 g garlic

    100 g big red chili

    15 g cayenne pepper

    60 g red tomatoes

    3 tbsp cooking oil

     

    50 ml cooking oil, for sauteing

     

    Whole spices:

    20 g ginger, crushed

    1 leek, sliced into 1 cm lengths

    2 bay leaves

     

    Seasoning:

    15 g sugar

    5 g salt

    15 g chicken stock powder

    20 ml water

Instructions

  1. Boil Chicken Intestines

    • Boil chicken intestines with ginger, kaffir lime leaves, and salt to reduce the smell of the intestines. 
    • Remove and cut according to preference and set aside.

  2. Making Oseng Usus Ayam

    • Blend all the ground spices together with the 3 tbsp cooking oil into a paste.

    • Heat the 50 ml of cooking oil in a frying pan over medium heat. Once the oil is hot, add the paste along with the whole spices.

    • Saute the spices for about 10 minutes or until cooked. The color will turn a deeper red, and the oil will start to separate from the spices. Once the spices are cooked, reduce the heat to low and add the seasoning and water. Stir until blended.

    • Then add the boiled chicken intestine and stir until everything is well mixed. Turn off the heat, remove, and set aside.
