  • 500 g Rice

    300 g Beef, sliced 

    Crackers / Emping

    70 g Keluak/kluwak

    Spices (B):

    2 stick Lemongrass, smashed & tied in knot

    5 Lime Leaves

    2 thumb size Galangal, smashed

    Seasoning (C):

    5 cloves Shallots

    3 cloves Garlic

    3 pcs Candlenut

    1 tsp Cumin

    1 thumb size Ginger

    1 thumb size Turmeric

    1 tsp White Pepper

    1 ½ tsp Coriander Powder

    2 Large Red Chilies

    Fried Rice (D):

    3 tsp Chicken Powder

    ½ tsp White Peppers

    1 tsp Sugar

    ½ tsp Salt

    Condiments (E):

    5 cloves Shallot, thinly sliced

    1 stick Leek, thinly sliced

    30 g Bean Sprouts

    Salted Egg (optional)

Who doesn’t love fried rice? It’s the quintessential dish of Indonesia which can be eaten for breakfast, lunch and even for a late dinner. This recipe is a fusion between the beloved national dish and the East Javanese keluak-based beef dish, Rawon. With aromatic flavors from candlenut, ginger, turmeric and coriander, Rawon elevates the humble fried rice to the next level. Make sure you cook the keluak through to get rid of the bitter taste.

Instructions

  1. Rawon Seasoning

    • With a grinder, grind the keluak seeds.
    • In a pan, preheat some oil and add in the ground keluak and spices in (B). Sauté until fragrant or when the oils are released. 
    • With a blender, blend the ingredients in (C) until smooth and add it into the sauteed spices. Sauté until well cooked. Once well cooked, remove and set aside

  2. Fried Rice Making

    • In a medium pan, preheat with some oil. Add in the sliced shallots and saute till fragrant. Add in the sliced beef and 2 – 3 tbsp of seasoning (from step 1). Stir it well. 
    • Once cooked, add in white rice and mix well.
    • Reduce the heat and add in the ingredients in (D) and stir well.
    • Once well combined, increase the heat and give it a good stir and remove when well done

Plate and Serve!

To serve, plate the rice and add crackers, salted egg, bean sprouts and fried shallots as a garnish.
