    100 g Bean Sprouts

    500 g Egg noodles, boiled

Mie Kocok is an Indonesian noodle dish which is commonly found in Bandung, West Java. It consists of yellow noodles served in thick beef broth, gravel slices, bean sprouts, meatballs, lime, and sprinkled with celery slices, green onions and fried onions. Some recipes may add beef tripe for some extra flavors and texture. This comforting dish is simple to make and the aromatic, spiced beef soup is definitely a welcome sight on chilly days.

Instructions

  1. Boil broth

    • In a pot, boil beef brisket and gravel for about 1 hour with 3 – 4 liters of water. Once tender, remove and cut to desired size.
    • In a separate pot, take about 1200ml of water and return to medium heat.
    • In a blender, add shallots, garlic, lemongrass, candlenut and ginger.
    • With some oil, sauté till fragrant. Add lemongrass and continue to sauté until the oils are released.
    • Add the sauteed spices into the boiling pot. 
    • Add lime and bay leaves, together with salt, sugar, white pepper and beef powder. Stir well.
    • Add mashed fried shallots and garlic, boiled beef and stir well.
    • Once cooked, remove from heat.
    Boil broth


Plate and Serve!

In a serving bowl, add egg noodles, bean sprouts and garnish with celery, leek, green onions and fried onions. Drizzle with some lime juice and serve.
