  • 1 kg Crabs 

    1 Sweet Corn 

    3 Spring Onion 

    ½ of an Onion 

    1 tbsp corn starch/Maizena 

    50 g Ginger

    5 Lime Leaves 

    500 ml Water

     

    Spice mix 

    5 cloves shallots 

    6 cloves garlic 

    10 Large red chilies 

    3 red bird eye chilies 

    20 gr ginger 

    1 tsp salt 

     

     

    Sauce

    4 tbsp chili sauce

    3 tbsp Tomato sauce 

    4 tbsp oyster sauce 

    3 tbsp Lime/lemon juice 

    2 tbsp sesame oil 

    20 gr Chicken Powder 

    20 gr sugar

    20 ml cooking oil

    200 ml water

Instructions

  1. Clean & Steam Crab

    • Crush/bruise the ginger. Prepare water in a pot and bring it to a boil.
    • Cut the corn into 7 pieces and put it in the water. Once done, remove and drain. Keep the water. 
    • Cut the crab into 2 parts from the bottom, don't let the crab shell break, clean, then put the crab in the boiling water, boil the crab for about 10 minutes or according to how well cooked one would want it.  
    • Once cooked, take out and set aside 
    • Break the crab claws using the tongs of the crab claws, enough so that the sauce will seep into the crab meat.

  2. Creating the sauce

    • Blend all the spice mix ingredients and seasoning, until it becomes a smooth paste. 
    • Prepare a large size pan, saute in a little oil add onion, lime leaves, spring onion and maizena until the spices are completely cooked.
    • In a pot, add 200 ml of water and wait for the water to boil. Add the sauce into the water and stir until blended and bring to a boil.

  3. Combine crab with sauce

    • After the sauce  boil, put in the crab and sweet corn,   
    • Stir well until the crab is spread evenly with the sauce and leave it until the sauce thickens. 


Plate and Serve!

Prepare a serving plate and arrange the crabs on a serving plate with garnish to beautify the dish and then serve.
