  • 1 kg Crab

    2 Limes

    1 stick Lemongrass, smashed

    20 gr Galangal, smashed

    3 Lime Leaves

    300 ml Thick Coconut Milk

    500 ml Water

    40 ml Cooking Oil

    2 g Salt

    20 g Chicken Powder

    7 g Sugar

    20 g Fried Onions

    20 g Shallot

    15 g Garlic

    20 g Red Cayenne Pepper

    50 g Big Red Chilies

    4 g Coriander Powder

    15 g Candlenut

    20 g Ginger

    15 g Turmeric

    2 g Cumin Powder

Instructions

  1. Make curry

    • Clean the crab and marinate with lime juice. Set aside.
    • In a blender, add shallots, garlic, cayenne pepper, red large chilies, coriander powder, candlenut, ginger and cumin powder. Blend well.
    • In a frying pan over medium heat, sauté the blended spice with some oil until cooked and fragrant with oils separated. Remove excess oil.
    • After the spices are cooked, add bay leaves, lime leaves, lemongrass and galangal. Stir well.
    • Add in the crab and stir well.
    • Add water and coconut milk. Stir well and bring it to a boil.
    • Add salt, sugar and chicken powder. Stir well.
    • Let the sauce reduce and remove from heat.

Plate and Serve!

Garnish with fried onions and serve.
