    1 Pomfret Fish, 500 - 600g

    Salt to taste

    1 lime 

    1 litre Cooking Oil

    Ingredients - Sambal Cobek (B):

    100 g Shallots 

    50 g Red bird’s Eye Chillies 

    10 g Galangal 

    15 g Ginger 

    150 g Warm Water 

    Seasoning (C)

    ½ tsp Salt 

    2 tbsp Sugar

    1 tsp Chicken Powder

Ikan goreng, or deep fried fish, is considered an everyday meal for many in Indonesia, but what makes Ikan Goreng Bumbu Cobek special is the spicy sambal. As bumbu cobek is usually made using a mortar, you want to really grind your chilies to get the perfect sauce. Have your limes ready because that’s what keeps both the fish and sambal fresh and tasty.

Instructions

  1. Bumbu Cobek (chilli in mortar)

    • Fry the shallots until cooked, take out and set aside 
    • Prepare the mortar, grind the chillies until it breaks, along with the shallots.
    • Prepare the ground chillies in a bowl, add seasoning and squeeze the lime (sans seed) to get aroma of the lime. 
    • Mix all ingredients well, add hot water and season to taste.


  2. Frying the fish

    • Clean the fish from the scales to the gut. Marinate the fish using enough salt and lime so that they are not too fishy.
    • In a pan with cooking oil, fry the fish until completely cooked, remove and set aside

  3. Combine fried fish and spices

    • Prepare a slightly concave serving plate so that the mortar seasoning sauce does not spill when you pour it later then place the fish on the serving plate 
    • Flush the fish with mortar spices together with the sauce, garnish according to taste
