  • Wrap Ingredients (A):

    250 g Flour

    20 g Tapioca Flour

    1 tbsp Sugar

    1 tsp Pandan Paste

    1 Egg

    1 ½ tbsp Butter, melted

    350 ml Water

    ½ tsp Baking Powder

    Sugar 

    Filling Ingredients (B):

    250 g Grated Coconut

    200 g Palm Sugar

    ½ tsp Salt

    1 pc Pandan Leaves (tie knotted or cut into pieces)

Satisfy your sweet tooth with Dadar Gulung Pandan. Usually bright green in color, this pandan-flavored crepe is widely sold in traditional markets of Indonesia, as well as neighboring countries. The sweet filling is made from grated coconut soaked in palm sugar that melts in your mouth with every bite. It’s the perfect treat to indulge in for a midday snack or after a hard day’s work.

Instructions

  1. Making the Batter

    • In a medium bowl, add in all the ingredients in (A). Use a whisk and mix till well combined. Leave it to rest for 10 minutes.

  2. Making Wrap

    • In a crepe pan or non-stick pan, heat with some butter.
    • Add in a scoop of batter and cook it with low heat.
    • Once cooked, remove and set aside.
    • Repeat for the rest of the batter. 
    • In medium pan, add in the grated coconut, pandan leave, palm sugar and salt.
    • Cook until the palm sugar is well dissolved.
    • Remove and set aside.


  3. Rolling the Dadar Gulung

    • Take the wrap, add in a tbsp of palm sugar coconut filling in the middle.
    • Fold the bottom of the wrap over the filling. Bring in the 2 sides and roll it in.
    • Repeat for the remaining wraps.

Garnish and Serve!

Sprinkle with some sugar and serve.
