    15 g Garlic, pureed

    5 g Salt

    2 Lime, juiced

     

    25 g Shallots

    20 g Garlic

    15 g Curly Red Chilies

    6 g Red Cayenne Pepper

    3 g Shrimp Paste

    30 g Butter

    3 g Salt

    13 g Chicken Powder

    14 g Oyster Sauce

    152 g Sweet Soy Sauce

As the name implies, Cumi Bakar Kecap Pedas is made of grilled squid served with a spicy soy sauce. Marinated in garlic, salt and lime, the squid is coated in a fragrant mix of chili, soy sauce, oyster sauce, shrimp paste and chicken powder to make a savory seafood dish that’s packed with flavor. Serve it up with rice for an authentic Indonesian meal.

Instructions

  1. Making Grilled Squid

    • Wash the squid and make incisions across body so that the spices can absorb into the squid easily.

    • Marinate the squid with garlic, salt and lime juice. Let it sit in the chiller for 15 minutes.

    • In a blender, add shallots, garlic, curly red chilies, big red chilies, red chili peppers and shrimp paste. Blend well.

    • Over medium heat, sauté the blended spice with butter until fragrant. Add lime leaves and stir well.

    • Add salt, chicken powder, oyster sauce, sweet soy sayce and stir well. Bring it to a boil. Set aside and cool to room temperature.

    • Once the seasoning has cooled down, add it to the marinated squid and stir well.

  2. Grill squid

    • Grill the squid for about 15 minutes or until cooked. Brush the spices frequently for added flavor.

    • Set aside to serve
