1 kg Squid – (Squid size 1 kg contains 5-6 tails)
15 g Garlic, pureed
5 g Salt
2 Lime, juiced
25 g Shallots
20 g Garlic
15 g Curly Red Chilies
34 g Big Red Chilies
6 g Red Cayenne Pepper
3 g Shrimp Paste
30 g Butter
3 g Salt
13 g Chicken Powder
14 g Oyster Sauce
152 g Sweet Soy Sauce
2 Lime Leaves
Wash the squid and make incisions across body so that the spices can absorb into the squid easily.
Marinate the squid with garlic, salt and lime juice. Let it sit in the chiller for 15 minutes.
In a blender, add shallots, garlic, curly red chilies, big red chilies, red chili peppers and shrimp paste. Blend well.
Over medium heat, sauté the blended spice with butter until fragrant. Add lime leaves and stir well.
Add salt, chicken powder, oyster sauce, sweet soy sayce and stir well. Bring it to a boil. Set aside and cool to room temperature.
Once the seasoning has cooled down, add it to the marinated squid and stir well.
Grill the squid for about 15 minutes or until cooked. Brush the spices frequently for added flavor.
Set aside to serve
