  • 500 g Chicken Feet, large

    5 Lime leaves

    20 g Ginger, smashed

    5 cloves Garlic, smashed

    5 g salt

    1 liter cooking oil

    200 g Big Red Chili

    200 g Red Cayenne Pepper

    100 g Red Tomatoes

    10 g Ginger

    35 g Shallot

    30 g Garlic

    15 g Candlenut

    5 Lime Leaves

    40 g Brown Sugar

    5 g Salt

    25 g Chicken Powder

    4 g MSG

    200 ml water

This Indonesian dish is a treat for spice lovers! With a name which literally translates to “devil’s claw”, Ceker Setan certainly lives up to it with its fiery flavors. The gelatinous nature of the chicken feet pairs well with the spicy sauce, making it a truly addictive snack.

Instructions

  1. Fry chicken feet

    • Boil the chicken feet with lime leaves, ginger, garlic and salt. Cook it over medium heat for about 30 minutes. Once they are cooked, give it an ice bath and set aside.
    • In a fry pan, heat some oil over medium heat and fry the chicken feet till it’s slightly brown. This will take about 20 minutes.

  2. Mix chicken feet in sauce

    • In a blender, add big red chilies, red cayenne pepper, red tomatoes, ginger, shallots, garlic, candlenut and brown sugar. Blend well.
    • Sauté the blended paste until fragrant and the oils are separated.
    • Add salt, chicken powder and MSG. Stir until evenly combined.
    • Once well combined, add water and mix well.
    • Add the fried chicken feet and simmer till the spices are reduced and absorbed into the chicken feet.
