Bakwan Jagung, or corn fritters, is a simple yet delicious Indonesian deep fried snack that’s perfect as a side dish or for teatime. All you need is one bowl to mix all the ingredients for this recipe. While it’s important to get a crispy golden brown exterior for a satisfying crunch, the secret here is to fry on low heat to keep the corn kernels juicy so you can feel them pop and burst in your mouth with each bite.

Instructions

  1. Mix bakwan jagung mixture

    • Clean the corn from the husk, 
    • Slice the red chili and spring onion thinly.
    • Mix all the ingredients together in a bowl, along with the flour and seasoning. 
    • Crack the egg in and mix well with the flour. Set aside

  2. Fry

    • Prepare a deep frying pan. Heat oil.
    • Ensure the oil is hot, but not bubbling. 
    • In low heat, with a ladle, take a scoop of the mix and pour in slowly into the oil. Make a couple of pieces, spread well so it forms nicely. Once half cooked, raise the heat, and fully cook until golden brown.

    | Ensure that the initial heat in the pan is on top of low heat. If cooked in high heat, the mixture would break and not be a whole piece .
