  • bakso:

    350 g minced beef

  • 50 g sago flour

  • 100 ml iced water 

  • 1 egg

  • 4 garlic cloves

  • 1/2 tsp white pepper

  • 3 tsp salt

     

  • broth:

    2 L water

  • 600 g ribs / beef bone

  • 6 garlic cloves

  • 1/2 tsp white pepper

  • 2 sticks of leek (chopped)

  • 3 tsp salt

     

  • complimentary ingredients:

    5 sheets dumpling skin

  • 10 white tofu (cut in half)

  • fried shallots

  • chili sauce (tomato ketchup and soy sauce)

In the slightly cooler climate of Malang, locals love enjoying hot dishes, and this warming bowl of Malang meatballs is just perfect for rainy days. Marinated minced beef is both enjoyed in the form of dense yet springy meatballs as well as a filling for crispy fried dumplings. It’s easy to prep for weekday lunches for a taste of East Javanese street food!

Instructions

  1. Make bakso

    • For bakso, blend the garlic, white pepper, and salt.  
    • Add 1 egg, iced water, minced beef and sago flour. Blend until they’re mixed well.
    • Boil water, shape the bakso batter like balls using ice cream scoop. 
    • Put into the boiling water until they are floating, and set aside. 
    • Put some of the bakso batter into the tofu, steam the tofu just for a while.
    • Put some of the bakso batter in the middle of dumpling skin, and folded, then fry until golden brown. 


  2. Make broth

    • Blend the garlic, pepper and salt, put into boiling water. Add the beef bone / ribs, and let the broth boil.


Assemble and Serve!

Prepare a bowl. Arrange the bakso, tofu and the fried dumpling in it. Pour the broth, and sprinkle it with fried shallots and chopped leek.
