This soft Chinese bun is a steamed flour-based snack enjoyed in Indonesia by adults and children alike. Best eaten during breakfast or afternoon tea, the variety of Bakpao fillings available make these cushion-like buns a snack that’s hard to resist. This recipe calls for a sweet chocolate filling, but you can choose to make it savory by replacing it with minced pork or chicken.

Directions

  1. Dough Making

    • Prepare a mixer. If there is no mixer, it can be done manually using a medium sized bowl.
    • Put in all the ingredients except the chocolate bar, turn on the mixer until the dough is half smooth. Then, put out the dough from the mixer or bowl and start to knead on the clean table until the dough is really smooth with no grains at all.
    • Round the dough then put the dough into a bowl or container and cover it with a clean cloth or cling wrap and leave it for 30 minutes or until the dough expands double in size.


  2. Steamed Bun Weighing & Forming

    • Prepare 1 tray and a few steam bun base papers or bun steam paper and weigh the bun.
    • Knead the dough for a moment to remove the air bubbles. Cut the dough into 50g pieces. Then, flatten using hands and add about 1 Tbsp of chocolate filling in the middle and wrap it up. Continue the same for the remaining dough.
    • After everything is done, cover the dough with a clean cloth or cling wrap and let it rest for 10 minutes.

    When proofing is done, do not leave the dough aside for more than 10 minutes. For steamed bun making, you can be creative with any form that you like or create the character to taste 



  3. Steaming & Plating

    • Prepare the steamer filled with water and bring it to a boil. Put in the steam buns into the steamer, steam the bun for about 15 minutes. 
    • Remove the buns and ready to serve.
