    100 g Basil Leaves

    40 g Shallots

    30 g Garlic

    100 g Red Cayenne Pepper

    120 g Big Red Chili

    7 g Turmeric

    10 g Galangal

    5 g Salt

    15 g Sugar

    20 gr Chicken Powder

    15 gr Fried Onions

    1 liter Cooking Oil

Instructions

  1. Cook and shred chicken

    • In a saucepan, fry the chicken fillets until cooked of golden brown.
    • Set aside and let it cool to room temperature.
    • Once cool, shred the chicken into small pieces.


  2. Cook chicken

    • In a blender, add shallots, garlic, red cayenne pepper, big red chili, turmeric, galangal, red tomatoes and blend well.
    • In a pan with some oil, sauté the blended paste until fragrant and the oil separates. Remove the excess oil.
    • Add in the shredded chicken and mix evenly.
    • Add salt, sugar and chicken powder and mix until well combined.
    • Add in basil leaves, give it a last stir and remove from heat.
    Cook chicken


Plate and Serve!

Sprinkle fried onions over the chicken and serve.
