    500 g chicken

  • 1 tbsp chicken powder

  • chilli paste:

    1 tsp salt

  • ½ tsp sugar

  • spices ingredients:

    7 pcs big red chillies

  • 7 pcs curly red chillies

  • 10 pcs shallots

  • 5 pcs garlic

  • 1 segment ginger

  • 10 tanks basil leaves

  • 4 pcs pecans

  • 5 g spring onion

  • 2 pcs lemongrass 

  • 3 strands lime leaves

Ayam rica-rica is specialty chicken dish from the city of Manado in Indonesia North Sulawesi. Rica means chili in North Sulawesi language, so ayam rica-rica translates to chicken with chili sauce. If you love bold, spicy, fresh, and citrusy dishes, you will definitely love ayam rica-rica. Maybe just add one or two bird eye chilies if this is the first time making this dish, especially if you have kiddies eating this too. Also, don’t forget the steamed white rice, and copious amounts of cold refreshing drink to counter the heat from all those chilies!

Instructions

  1. Prepare the Chicken

    • Cut the chicken into 6 parts, clean, bathed and set aside 


  2. Marinate the chicken with the marinate spice mix

    • Marinate the chicken with the marinate spice mix( water, chicken powder, salt, lime, cooking oil), ensure a thorough rub through, and keep the chicken chilled in the fridge for about 10 – 15 minutes. 


  3. Sautee, Blend & Fry

    • Saute the spice ingredients until half cooked. Pour the mix into a blender or food chopper and  blend roughly. Ensure it's not a smooth paste. 
    • Pour in oil to pan, and heat the mixed paste until it is fragrant with exotic aroma, and cooked.
    • Add in lime leaves, lemongrass and season to taste, continuing to saute.
    Sautee,  Blend & Fry


  4. Fry the marinated Chicken

    • In a pan, add 1 ltr of oil. Once heated, place and fry the marinated chicken until golden brown. Set aside, and mix into the paste mix fried pan, and combine the mix and cook at low heat. 
    • Add in the basil leaves, spring onion and cook until all the spices have become one with the chicken.

    After the chicken is poured into the sautéed chilli paste pan, add about 100ml water and stir thoroughly, until the water evaporates and the spices are further absorbed into the chicken. 

    Fry the marinated Chicken


Plate and Serve!

Place and set the dish on a plate, sprinkle spring onions and serve with warm rice.
