  • 1 chicken (cut into 4 pieces)

  • 1 tsp tamarind water

  • 1 tsp salt

  • 6 tbsp soy sauce

  • 1 tsp sugar

  • 4 bird’s eye chilies

  • 8 shallots

  • 4 cloves garlic

  • 1 tsp white peppercorns

  • 3 candlenuts (roasted)

  • ½ tsp salt

  • 3 tbsp butter

There’s so many wonderful ways to enjoy chicken, and this Indonesian-style Soy Sauce Grilled Chicken is an easy chicken dish for busy weekday nights. That sweet and spicy sauce that you’ve spread generously over the chicken will beautifully caramelize in the oven, leaving you with a slightly charred sticky coat of absolute deliciousness. Eat it on its own or with a bowl of rice for a satisfying meal.

Instructions

  1. Marinate chicken

    • Marinade the chicken with tamarind water and salt.
    • Set aside.


  2. Cook chicken with sauce

    • In a saucepan, stir fry the ground spices with butter until fragrant.
    • Add in the chicken pieces into the saucepan.
    • Pour in 650ml of water, some soy sauce, sugar and salt.
    • Cook with low heat until chicken is tender and sauce almost dry.
    • Remove the chicken and be sure to keep the sauce


  3. Roast chicken

    • Preheat the oven at 180° C.
    • Spread the sauce on top of the chicken and roast the chicken until well cooked and caramelised. 


Plate and Serve!

Serve with hot rice, vegetables and sambal.
