  • 500 g Chicken, cut into 8 pieces

    50 g Butter

    30 g Shallot

    20 g Garlic

    10 g Ginger

    9 g Oyster Sauce

    30 g Sweet Soy Sauce

    20 g Worcestershire

    4 g White Pepper Powder

    100 ml of water

    15 g Leeks, sliced lengthways

    30 g Onions, sliced lengthways

    1 whole Lime

    2 g salt

    500 ml cooking oil

There are many versions of butter fried chicken across Asia, and each one is as irresistible as the next. This Ayam Goreng Mentega from Indonesia is no different! Filled with the signature warm buttery flavors, it is unique in its own right with the addition of the kicap manis (sweet soy sauce) to the sauce. Tender juicy chicken coated in an addictive salty-sweet glaze, this dish is best served with a bowl of white rice for a lovely home cooked meal.

Instructions

  1. Marinate chicken

    • Marinate the chicken with salt and lime and let it stand for 15 – 30 minutes.
    • In a frying pan with hot oil, fry the chicken until it’s cooked or golden brown.
    • Remove and set aside.


  2. Saute chicken

    • In a blender, blend shallots, garlic, ginger until smooth.
    • In a pan over medium heat, sauté the blended paste until fragrant.
    • Add water, oyster sauce, sweet soy sauce, Worcestershire sauce, white pepper and stir well.
    • Add in the fried chicken and coat well. Add in butter, leek and onions. Stir well. 
    • Cook until the sauce reduces and thickens.
    Saute chicken


Plate and Serve!

Serve hot.
