    9 g Candlenut

    7 g Galangal

    10 g Turmeric

    20 g Garlic

    20 g Shallots

    4 g Coriander

    2 g White Pepper Powder

    60 g Starfruit, cut lengthwise 1 piece into 4 parts

    2 Red Tomatoes, cut into 6 wedges each

    3 Green Tomatoes, cut into 4 wedges each

    5 Bay leaves

    5 g Lime Leaves

    65 g Coconut Milk

    30 ml Cooking Oil

    15 g Red Curly Chili, cut into 3 or 4 slices each

    10 g Green Curly Chili, cut into 3 or 4 slices each

Ayam Garang Asem is a traditional Indonesian dish from Central Java, where chicken is cooked in a flavorful spice paste and simmered in a coconut milk broth. It is then steamed in banana leaves for extra fragrance. The addition of starfruit, red and green tomatoes, and chili balances out the rich flavors with a hint of sourness and heat.

Instructions

  1. Mix vegetable and chicken

    • In a blender, blend candlenut, galangal, turmeric, garlic, shallot, coriander, white pepper powder into a smooth paste.
    • In a pan, with about 50ml cooking oil, saute the spice paste until fragrant. Remove the excess oil and add in bay leaves, lime leaves. Stir fry further and add the chicken. While the chicken is cooking, add in water and coconut milk. Simmer until the chicken is fully cooked. 
    • After the chicken is cooked, add in starfruit, red tomatoes, green tomatoes, curly red chilies, curly green chilies. 
    • Once the vegetables are slightly wilted, remove from heat and set aside.

  2. Steam chicken

    • In a bowl, line it up with banana leaves and add the chicken in. cover the bowl with banana leaves and steam it for about 15 – 20 minutes.

Plate and Serve!

After steaming, lift the banana leave cover, sprinkle with fried onions and serve.
