  • ½ chicken

  • 5 cloves garlic

  • 1 pc 4 cm galangal (peeled)

  • 1 pc 4 cm ginger (peeled)

  • 1 stalk lemongrass (sliced)

  • 1 tsp turmeric powder

  • 11 shallots

  • 2 lime leaves

  • 5 candlenuts

  • 3 tbsp tamarind juice

  • ½ tsp coriander seeds

  • 40 g butter

  • 4 red chillies

  • 2 fresh tomatoes

  • 3 small limes

  • 5 g thai basil

  • 3 tbsp kecap manis (sweet soy sauce)

  • 2 tbsp sugar

  • salt

  • pepper

Classic Indonesian spices and herbs make this chicken dish extra delightful, especially if you let the juicy chunks of meat marinate overnight to absorb all the flavors. It’s the perfect Asian addition to any BBQ or grill dinner that you can recreate with ease. Serve with sambal for an extra kick and pair with curry and rice for a finger-licking good meal.

Instructions

  1. Marinate the chicken

    • In a blender, add garlic, galangal, ginger, lemongrass, turmeric, 6 shallots, lime leaves, candlenuts, tamarind juice, coriander seeds and butter. Blend until the ingredients come together into a rough paste. Season with salt, pepper and sugar to taste.
    • Take ⅔ of the marinade and marinate chicken. Set aside for at least 30 minutes to marinate.

  2. Grill the chicken

    • Place the chicken on a preheated grill for about 8 minutes on each side.
    • Add 3 Tbsp kecap manis to the remaining mixture and use a brush to spread over the chicken while it is grilling to baste.

  3. Make the sambal

    • Using a blender, pulse the red chilies, 5 shallots, fresh tomatoes, limes, Thai basil and 2 Tbsp sugar, until roughly combined. Set aside.

Plate and Serve!

Remove chicken from grill and serve with sambal.
