  • Sambal colo-colo:

    80 g shallots, thinly sliced

  • 15 g cayenne pepper, thinly sliced

  • 60 g red tomatoes, cut into 1 cm cubes

Tenggiri Bakar Colo Colo is an Indonesian dish which consists of grilled mackerel served with sambal colo colo, a refreshingly spicy sauce from Maluku made of chopped shallots, cayenne pepper, red and green tomatoes, and lime juice.This savory fish dish goes well with warm rice for lunch or dinner.

Directions

  1. Cool the mackerel

    • Cut the mackerel into 2 cm pieces and marinate with salt, lime juice, garlic powder and oil. Let it sit for 20 minutes in the chiller.

    • With a skillet, grill the mackerel over medium heat on both sides.

  2. Prepare the sambal colo-colo

    • In a heat resistant bowl, add shallots, cayenne pepper, tomatoes, salt, sugar, chicken powder, lime leaves, lime juice and sweet soy sauce. Combine well.

    • Heat up some oil, gradually pour it over the chilies and stir constantly.

Combine and serve!

  • Drizzle the sambal sauce over the grilled fish and serve.
