  • 7 chicken eggs

  • 1500 ml water

  • 600 ml cooking oil

  • 1 L ice water

  • Green Chili Sauce:

    45 g curly green chili

  • 119 g large green chili

  • 20 g garlic

  • 40 g shallots

  • 10 g chicken powder

  • 2 g salt

  • 10 g sugar

  • 3 g shrimp paste

  • 3 kaffir lime leaves

  • 2 bay leaves

  • 30 g galangal,smashed

  • 30 g ginger, smashed

  • 100 ml cooking oil

  • 250 ml water

Telur Sambal Ijo (Eggs with Spicy Green Chili Sauce)

Telur Sambal Ijo is an unassuming yet delicious dish. Made up simply of hard boiled eggs and green chili sauce, its blend of spice is not for the faint hearted. With steaming hot rice, this is comfort food at its best.

Directions

  1. Boil the eggs

    • Boil 1500 ml of water in a pan over medium heat.

    • When the water is boiling, add the eggs and boil them for 7 minutes.

    • After the eggs are cooked, immediately remove them and put them in ice water and peel the shells.



  2. Fry the eggs

    • Heat cooking oil over medium heat, then fry the eggs for 3 minutes. Remove and set aside.


  3. Prepare the green chili

    • Blend curly green chili, big green chili, garlic, shallots and shrimp paste.

    • Saute the green chilli chili sauce over medium heat with kaffir lime leaves, bay leaves, galangal (geprek) and ginger. Saute until cooked and fragrant

  4. Add the eggs

    • After the green chili is cooked, add the fried eggs and water. Stir until well blended and the sauce is absorbed. 

    • Season with salt.

Plate and Serve!

  • Transfer the eggs to a serving plate.

  • Serve the Telur Sambal Ijo with steaming hot rice.
