  • 4 fried eggs

  • 1 L cooking oil

  • Dry flour ingredients:

    250 g high protein flour

  • 2 g baking soda

  • 7 g salt

  • 5 g chicken stock powder

  • 7 g coriander powder

  • 4 g white pepper powder

  • 10 g garlic powder

  • Wet batter ingredients:

    300 ml of water

  • 20 g milk powder

  • 4 g salt

  • 50 g flour

  • Geprek Chilli Sauce:

    30 g red cayenne pepper

  • 65 g curly red chili

  • 10 g garlic

  • 10 g shallots 

  • 7 g salt

  • 10 g sugar

  • 1 lime, juiced

  • 100 ml cooking oil

Telur Geprek are fried eggs with a thick topping of hot chili sauce. It is called telur geprek because before serving, the eggs will be coated with the spicy chili sauce which is commonly termed as Geprek. Easy to cook, and protein packed, this dish is a frequent accompaniment to hot rice for lunch or dinner.

Directions

  1. Fry the eggs

    • In a bowl, mix dry flour ingredients and stir until the ingredients are well blended.

    • In another bowl, mix the wet batter ingredients and stir until dissolved and there  are no lumps of flour.

    • Coat  the fried eggs in the dry flour, followed by the wet batter. Repeat this step a few times. Make sure the eggs are coated thoroughly.

    • Over medium heat, deep fry the eggs until they are golden brown,  then remove and set aside.

  2. Prepare the Geprek Chilli Sauce

    • Grind the geprek ingredients coarsely and then add lime juice. Pour into a heat resistant bowl.

    • Heat up some oil. Then pour the hot oil into the grounded geprek sambal, mixing the geprek as you pour the oil in.

  3. Coat eggs with Geprek Chili Sauce

    • Gently press the geprek crispy eggs in the mortar with a pestle, just to crack it slightly. Then coat with the geprek and gently crush it again.

    Apart from preparing with fried eggs, Geprek eggs can also be made using omelettes.

Plate and Serve!

  • Transfer it onto a serving plate and serve with rice.
