Telur Ceplok Cabe Ijo is a simple dish where eggs are cooked sunny side up and paired with cabe ijo, a popular Indonesian sambal made out of green chili. Savory and spicy at the same time, this humble side dish is best paired with white rice and other mains for a complete meal.

Directions

  1. Cook the green chilies

    • In a pan, add big green chilies, curly green chilies, green cayenne pepper, shallots and garlic. Sauté well until fragrant and wilted.

    • Remove all the chilies and shallots and grind the remainder.

    • Cook them again in some oil over medium heat and add lime leaves, salt, sugar and chicken powder. Combine well.

  2. Add the eggs

    • Add the sunny side up eggs and simmer for about 10 minutes until the spices are absorbed into the eggs.

Garnish and serve!

  • Garnish with fried shallots and serve.
