Semur Betawi usually uses a different choice of meat and a wider variety of spices (14 or more!) as compared to other variations of semur or stews. Traditionally cooked with buffalo meat, this Semur Daging Khas Betawi recipe uses beef instead. This delicious stew is often paired with ketupat, and served on special occasions such as lebaran (Hari Raya) as well as weddings.

Directions

  1. Prepare the potatoes and beef

    • Boil baby potatoes until cooked then set aside.

    • Cut beef to about 1 cm thickness then set aside

    To make the meat stew, choose a type of meat that is tender and cut it against the fiber so that the meat does not crumble.

    You can roast the beef for 30 minutes before cooking so that it will cook faster when it is in the soup.

    Besides potatoes, you can use tofu or tempeh.



  2. Prepare the spice paste

    • Puree the ingredients, Candlenut, Turmeric, Ginger, Garlic, Coriander, Cumin and Galangal. Then saute them using medium heat for about 15 minutes or until the spices are cooked.

  3. Prepare the stew

    • After the spices are cooked, add Bay Leaves, Orange Leaves, Cinnamon, Lemongrass (Geprek), Cloves, Nutmeg Powder and White Pepper, stir until blended, then add water and seasoning, which are soy sauce, salt and sugar then bring to a boil.

  4. Making the stew

    • After boiling, add the potatoes and beef and cook the stew for about 45 minutes while stirring.

    • Cook until the sauce thickens then remove from heat and set aside.

Plate and Serve!

  • Prepare a serving bowl then transfer the stew into a bowl topped with a sprinkle of fried onions and serve.
