  • 250 g oyster mushrooms, shredded

In Indonesian cuisine, pepes is most commonly known as steamed fish wrapped in a banana leaf, but you can also make it with chicken, tofu and mushrooms. For vegetarians looking for ways to cook their protein, this recipe is for you. Pepes Jamur is a simple yet appetizing side dish made with oyster mushrooms seasoned with aromatic spices, and wrapped with a banana leaf for a hint of sweetness. Eggs will be used to bind all the ingredients but if you want to go completely vegan, you can just skip the egg and munch on it for lunch with a bowl of rice.

Directions

  1. Prepare the spice paste

    • In a food processor, add the shallots, garlic and turmeric and blend into a smooth paste.


  2. Cook the mushrooms

    • In a pan, sauté the paste with oil until fragrant. Add the big red chili, big green chili and fry until the chili has softened.

    • To the pan, add salt, sugar, chicken powder and the shredded oyster mushrooms, mix well to combine, then transfer to a bowl.

    • Beat the chicken eggs and pour the beaten eggs into the bowl. Add the basil leaves and mix well to combine.

    Cook the mushrooms


  3. Wrap with banana leaves

    • Divide the ingredients into 3 equal portions. 

    • Wrap each portion with banana leaves and fasten both ends closed with toothpicks.

    • Steam the banana parcels for 20 mins, then remove and set aside to cool slightly.

Plate and Serve!

  • Unwrap the steamed parcels from the banana leaves and serve with steamed white rice.
