250 g oyster mushrooms, shredded
20 g shallots
10 g garlic
7 g turmeric
30 g big red chili, sliced oblique
30 g large green chili, sliced oblique
30 g basil leaves
7 g salt
10 g sugar
7 g chicken powder
60 g chicken eggs
4 banana leaves
30 ml cooking oil
In a pan, sauté the paste with oil until fragrant. Add the big red chili, big green chili and fry until the chili has softened.
To the pan, add salt, sugar, chicken powder and the shredded oyster mushrooms, mix well to combine, then transfer to a bowl.
Beat the chicken eggs and pour the beaten eggs into the bowl. Add the basil leaves and mix well to combine.
Divide the ingredients into 3 equal portions.
Wrap each portion with banana leaves and fasten both ends closed with toothpicks.
Steam the banana parcels for 20 mins, then remove and set aside to cool slightly.
