  • 200 g oncom

  • 50 g leunca (black nightshade)

  • 30 g basil leaves

  • Spices Ingredients:

    30 g shallots

  • 15 g garlic

  • 50 g curly red chili

  • 20 g red cayenne pepper

  • 20 g galangal

  • 30 ml cooking oil

  • Seasoning:

    3 g salt

  • 10 g sugar

  • 8 g chicken stock powder

  • 15 g oyster sauce

Oncom Leunca (Sauteed Oncom with Leunca)

Oncom Leunca is another famous dish using oncom as the main ingredient. Oncom is made from fermented soybeans and leunca is one of the side dishes from West Java which is often consumed together with white rice. Combining oncom and leunca and sauteing them with spices makes it very scrumptious! Extra white rice please!

Directions

  1. Crush the oncom

    • Crush the oncom by hand, just to break it up, and set it aside.



  2. Prepare the spice paste

    • Coarsely grind the spice ingredients into a paste.

    • Saute the paste in the cooking oil on medium heat until fragrant, about 10 minutes.

    • Add seasoning and stir until mixed.

  3. Add the leunca and oncom

    • Add the leunca and oncom to the pan while continuing to stir until well mixed and cooked, about 15 minutes.

    • Add the basil and stir again until the basil is wilted. Turn off the heat.

    Add 1-2 tablespoons of sweet soy sauce if a little sweetness to the oncom is preferred. Cayenne pepper can be added for extra spice.

    Besides leunca, aubergine may be added to the dish.

    Add the leunca and oncom


Plate and Serve!

  • Prepare a serving plate, and transfer the oncom to the plate. Garnish with fried onions and serve.
