  • 200 g oncom

  • 50 g salted peda fish

  • 300 ml cooking oil, for frying salted fish

  • 30 ml cooking oil, for sauteing

  • 30 g basil leaves

  • 10 g fried onions

  • Spices Ingredients:

    30 g shallots

  • 15 g garlic

  • 50 g curly red chili

  • 20 g red cayenne pepper

  • 20 g galangal

  • Seasoning:

    3 g salt

  • 10 g sugar

  • 8 g chicken stock powder

  • 15 g oyster sauce

Oncom Tumis Pedas (Spicy Stir-fried Oncom)

Oncom Tumis Pedas is an interesting and creative way of cooking with Oncom. Almost all Sundanese vendors and restaurants in West Java have this ready for their regular customers who are looking for some delicious and spicy heat to enhance their steam rice.

Directions

  1. Fry the salted fish

    • Fry the salted fish until cooked or golden brown. Then shred the salted fish meat and set aside.

    Any type of salted fish can be used for this recipe.



  2. Crush the oncom

    • Crush the oncom by hand, just to break it up, and set aside.


  3. Grind the spice ingredients

    • Coarsely grind the spice ingredients.

    • Saute the spices in the cooking oil on medium heat until fragrant, about 10-15 minutes.

    • Add seasoning and stir until blended

    Grind the spice ingredients


  4. Add the salted fish and oncom

    • Add the salted fish meat and oncom to the pan while continuing to stir until blended and cooked, about 15 minutes.

    • Add the basil and stir again until the basil is wilted. Turn off the heat.

    Add 1-2 tablespoons of sweet soy sauce if a little sweetness to the oncom is preferred.

    Cayenne pepper can be added for extra spice.

    Add the salted fish and oncom


Plate and Serve!

  • Prepare a serving plate, and transfer the oncom to the plate. Garnish with fried onions and serve.
