200 g oncom
50 g salted peda fish
300 ml cooking oil, for frying salted fish
30 ml cooking oil, for sauteing
30 g basil leaves
10 g fried onions
Spices Ingredients:
30 g shallots
15 g garlic
50 g curly red chili
20 g red cayenne pepper
20 g galangal
Seasoning:
3 g salt
10 g sugar
8 g chicken stock powder
15 g oyster sauce
Fry the salted fish until cooked or golden brown. Then shred the salted fish meat and set aside.
Any type of salted fish can be used for this recipe.
Coarsely grind the spice ingredients.
Saute the spices in the cooking oil on medium heat until fragrant, about 10-15 minutes.
Add seasoning and stir until blended
Add the salted fish meat and oncom to the pan while continuing to stir until blended and cooked, about 15 minutes.
Add the basil and stir again until the basil is wilted. Turn off the heat.
Add 1-2 tablespoons of sweet soy sauce if a little sweetness to the oncom is preferred.
Cayenne pepper can be added for extra spice.
