For the fried rice:
250 g squid
50 g shallots
30 g garlic
100 g big red chili
25 g red cayenne pepper
10 g ginger
10 g coriander
50 g cooking oil
500 g steamed white rice
10 g chicken powder
3 g salt
5 g sugar
3 g white pepper
For the fried rice (optional):
9 g sweet soy sauce
9 g oyster sauce
fried egg omelette
In a food processor, put the shallots, garlic, big red chili, red cayenne pepper, ginger and coriander. Blend until smooth.
Preheat a frying pan, then sauté the blended spices until fragrant.
To the pan, add the squid, stir to mix well and cook until the liquid is reduced and the paste starts to produce oil
Add the white rice and stir until well combined.
Add the chicken powder, salt, sugar and white pepper.
Optional: at this stage, you may add sweet soy sauce and oyster sauce for more flavor.
Cut the fried egg omelette into thin strips and top the fried rice with the egg.
Sprinkle fried shallots and garnish with parsley.
The dish is now ready to serve.
To add more color to the fried rice, you can add chopped green onions, or chopped red and green chilies for the extra spice kick.
