  • Ingredients Kolak:

    250 g orange yam

  • 250 g purple sweet potato

  • 2 pcs banana plantain

  • 200 g sugar palm fruit, (known also as kolang kaling)

  • Kolak Sauce:

    300 ml water

  • 200 ml thick coconut milk

  • 50 g sugar

  • 70 g brown sugar

  • 3 g salt

  • 1 pandan leaf

Kolak Pisang Ubi (Banana and Sweet Potato Dessert)

Kolak is an Indonesian dessert made with a sauce base of palm sugar, coconut milk, and pandanus leaf. A variation in which banana and sweet potato are added, is called Kolak Pisang Ubik or banana and sweet potato kolak. Other variations may use ingredients such as pumpkins, jackfruit, plantains, cassava, rice balls, and tapioca pearls. Fit for any occasion, this kolak dessert is often served at home or in restaurants, especially for iftar during Ramadhan. The sweet ingredients are supposed to replenish the blood sugar in the body after many hours of fasting.

Directions

  1. Peel and cut the ingredients

    • Peel and cut purple sweet potato, orange yam, and banana according to bite size preference. Wash thoroughly and set aside.



  2. Prepare the kolak sauce

    • In a medium-sized saucepan, add the Kolak sauce ingredients and bring to a boil while stirring constantly.

  3. Add in the cut ingredients

    • Once boiling, add the sweet potatoes, yam,  bananas, kolang kaling and cook until all are thoroughly cooked, especially the sweet potato and yam. 

    • Turn off the heat and set it aside.

    In addition to the ingredients above, other ingredients such as salak seeds or pearl seeds can be added.

    Add in the cut ingredients


Plate and Serve!

  • Prepare a serving bowl,  pour kolak into the bowl and serve.

Kolak Pisang Ubi can be served either hot or cold.
