500 g wheat flour
125 g tapioca flour
50 g butter
220 ml water
15 g garlic, ground
25 g shallots, ground
7 g salt
5 g chicken stock powder
Prepare a medium sized bowl and add all the ingredients
Mix all the ingredients until well blended and smooth. Divide the dough into 2.
Thinly sliced chives and celery leaves can be added to the mix.
A hand crank noodle roller can be used to flatten the chips dough.
Prepare hot oil, and fry the chips until golden brown. Drain off excess oil and set aside.
