In traditional Javanese weddings, there are many delectable dishes that accompany the rich ceremonial rituals. Many of which have deep philosophical values. One of which is the Jadah. Made with glutinous rice, Jadah is sticky, representing the hope that the couple will always have a close relationship, one that is difficult to separate. Making Jadah takes a very long time, requiring extra patience but the steps are simple and it's worth every bite.

Directions

  1. Prepare and cook the glutinous rice

    • Soak the glutinous rice for 2- 3 hours then wash thoroughly.

    • Steam the soaked glutinous rice for 1 hour.

    • Remove the steamed glutinous rice and put it in a bowl.

    Make sure the glutinous rice is really cooked so that it is easier to mash. Line with plastic so that it doesn't stick during the compressing process.

    White glutinous rice can be replaced with black glutinous rice.

    Prepare and cook the glutinous rice


  2. Add grated coconut and salt

    • Then add grated coconut and salt. Stir until well blended and steam again for 30 minutes.


  3. Mash the glutinous rice

    • Remove and mash the glutinous rice until it’s smooth, and put it into a bowl around 15 cm in diameter, and 2 - 3 cm high.

    • Press down on the contents in the mold until it turns solid. Then remove from bowl and cut according to size preference.

  4. Bake the Jadah

    • Bake the Jadah in a non-stick pan over medium heat until it’s golden brown on both sides. Then set aside.

    Besides baking, Jadah can also be fried.



Plate and Serve!

  • Prepare a serving plate, transfer Jadah onto the plate and serve.
