Es Nangka Rumput Laut or Iced Seaweed Jackfruit is an Indonesian drink made from jackfruit combined with syrup, milk, kolang kaling (sugar palm) and of course, seaweed. This refreshing drink is suitable to be served during hot weather or as an iftar treat during Ramadan. The red coloring adds an attractive contrast to the white milk and yellow jackfruit. This cooling blend will definitely brighten up your day!

Directions

  1. Cut the jackfruit

    • Cut the jackfruit into 1 cm squares. Set aside.

    Choose a jackfruit that is ripe enough to make it sweeter and more tender.

  2. Making the seaweed syrup

    • In a saucepan, add water, simple syrup, red food coloring and bring it to a boil. 

    • Once it comes to a boil, add seaweed and kolang kaling. Simmer for about 3 minutes and remove from heat. Set aside.

Combine and serve!

  • In a serving glass, add ice cubes, kolang kaling and seaweed syrup, jackfruit and milk according to desired taste.

  • Stir well and serve.

Fresh milk could be changed with UHT milk / skim milk.
