500 g coconut, grated
5 cloves shallots
4 cloves garlic
3 cm galangal
3 cm ginger
5 lime leaves
100 ml water
1 ½ tbsp coriander powder
7 large red chilies
2 tbsp sugar
1 ½ tsp salt
1 L cooking oil
Meat ingredients:
500 g beef
1 tbsp coriander powder
20 g turmeric
5 cloves garlic
4 cm galangal
3 tbsp sugar
600 ml water
1 tsp salt
In a blender, add coriander powder, turmeric, garlic and galangal. Blend till smooth.
In a saucepan, add water, grounded spices, salt, sugar and beef. Cook for 1 hour over medium heat.
Blend shallots, garlic, galangal, ginger, lime leaves, coriander powder, big red chilies and water.
Heat up a frying pan over medium heat, add coconut, blended spice, salt and sugar. Stir well.
Add beef and 200ml from the beef broth and simmer well.
Once the broth is reduced at about 20 minutes, remove and set aside
With a frying pan, over medium heat, fry the beef jerky and coconut until it dries up and turn golden brown.
The coconut should be completely dry.
