  • 1 L cooking oil

  • 20 g turmeric

Dendeng Ragi is an Indonesian beef jerky that is cooked with grated coconut. A simple and flavorful dish that’s set to entice your appetite, it is a staple for lunch or dinner in every East Javanese household. Enjoy the savory, sweet and aromatic flavors with a plate of warm rice and homemade sambal. Since it is dried, it's easy to store and reheat for later days.

Directions

  1. Cook the beef

    • In a blender, add coriander powder, turmeric, garlic and galangal. Blend till smooth.

    • In a saucepan, add water, grounded spices, salt, sugar and beef. Cook for 1 hour over medium heat.

    • After 1 hour, remove the meat to cool to room temperature.

    • Cut the meat into 1 cm slices then flatten it into ½ cm. Set aside.

  2. Blend the spices

    • Blend shallots, garlic, galangal, ginger, lime leaves, coriander powder, big red chilies and water. 

    • Heat up a frying pan over medium heat, add coconut, blended spice, salt and sugar. Stir well.



  3. Add beef in spice

    • Add beef and 200ml from the beef broth and simmer well.

  4. Fry the beef and coconut

    • Once the broth is reduced at about 20 minutes, remove and set aside

    • With a frying pan, over medium heat, fry the beef jerky and coconut until it dries up and turn golden brown.

    • The coconut should be completely dry.
