  • 250g Wheat Flour

  • 4g White Pepper Powder

  • 20g Leeks, thinly sliced

  • 5g Chicken Powder

  • 5g Salt

  • 300ml Hot Water

  • Dipping:

  • 3 Eggs

  • 500ml Cooking Oil

  • Sauce:

  • 70g Chili Sauce

  • 30g Tomato Sauce

  • 20g Oyster Sauce

  • 20g Sugar

  • 2g Salt

  • 7g Rice Vinegar

  • 30ml Water

Cilor (Bite-sized Balls with Chili Sauce)

Short for aci and telor, Cilor is a typical West Javanese snack primarily made from starch, or what is commonly called aci in Sundanese, and eggs. Bite-sized balls of starch are seasoned and boiled before being skewered. Each stick is then dipped in eggs and fried till golden brown. Crispy on the outside and chewy on the inside, this extremely addictive Indonesian treat is best served with a homemade chili sauce for a spicy kick!

Directions

  1. Make Cilor

    • In a bowl, add tapioca flour, wheat flour, white pepper, leek, chicken powder and salt. Mix well.

    • Gradually add hot water into the dry ingredients and stir constantly so that it comes well together.

    • Knead the dough by pushing downwards and outwards with your palm. 

    • Once it comes in together as a smooth ball, take about 10 g of dough and roll it into a ball.

    • In a medium saucepan, add 1 litre of water and bring it to a boil.

    • Add the cilor balls into the boiling water and cook well until it floats. Remove and set aside.

    • Take a skewer and thread 4-5 balls into the skewer.

    • In a bowl, beat the eggs and coat the skewers with the egg.

    • Deep fry the cilor skewers in hot oil until golden brown. Repeat for all.

  2. Make The Sauce

    • Make a sauce, prepare a sauce pan, then add the ingredients: Chilli Sauce, Tomato Sauce, Oyster Sauce, Sugar, Salt, Rice Vinegar and Water then cook until it boils and the sugar dissolves then set aside
    • In a saucepan, add chili sauce, tomato sauce, oyster sauce, sugar, salt, rice vinegar and water. Bring it to a boil.

Plate & Serve!

  • Serve cilor with the sauce on the side.
