Marinated Chicken:
1 kg Chicken Wings
20g Garlic, coarsely chopped
2g White Pepper
10g Chicken Powder
500ml Cooking Oil
Hot Sauce:
50g Butter
50g Onion, thinly sliced
2 leeks, thinly sliced
20g Garlic, coarsely chopped
57g Honey
95g Sweet Soy Sauce
57g Tomato Sauce
20g Red Cayenne Pepper, thinly sliced
4g White Pepper Powder
2g Salt
18g Sugar
5g Chicken Powder
150ml Water
5g White Sesame Seeds
Marinate the chicken wings with garlic, white pepper, chicken powder and let it sit in the chiller for about 20 minutes.
Deep fry the marinated chicken wings until golden brown and set aside. Drain off all excess oil.
With a skillet, sauté some onions, garlic, cayenne pepper, green onions with some butter until fragrant.
Add water, honey, sweet soy sauce, tomato sauce, white pepper and stir well.
Bring it to a boil.
Add the fried chicken wings into the sauce and coat well with the sauce.
Top with sesame seeds and serve.
