  • 14 g salt

  • 5 g chicken powder

  • 10 g coriander powder

  • 4 g white pepper powder

  • 10 g garlic powder

  • Dipping:

    700 ml water

  • 52 g milk powder

  • 7 g salt

  • Geprek sauce:

    30 g red cayenne pepper

  • 65 g curly red chili

  • 10 g garlic

  • 10 g shallots

  • 7 g salt

  • 10 g sugar

  • 7 g msg

  • 1 limo / lime

  • 100 ml oil

A common delicacy across Asia, Ceker or chicken feet is no doubt, a local favorite. This Indonesian recipe for Ceker Geprek involves frying the chicken feet after it has been boiled and seasoned, resulting in a distinctly addictive texture, which is crispy and gelatinous at the same time. Paired with a raw chili and oil mixture for a spicy kick, it can be eaten on its own as a snack or with rice.

Directions

  1. Boil the chicken claw

    • Boil the chicken claws with Ginger, smashed, Garlic, smashed, Salt, Lime Leaves and Leeks (cut 4 cm). Boil the claws for 15 minutes over medium heat. After cooking, put it in ice water and leave it for 1 minute.

  2. Making Crispy Chicken Claw

    • Prepare flour ingredients: High Protein Wheat Flour, Baking Soda, Salt, Chicken Powder, Coriander Powder, White Pepper Powder and Garlic Powder. Then stir until the ingredients are well blended.

    • Prepare the dyes: Water, Powdered Milk and Salt. Then stir until the salt dissolves.

    • Enter into the dry flour claws that have been boiled before stirring until blended.

    • Then dip it in the dipping material for a while, just wet the claws and put it back in the dry flour ingredients, stir until the claws are covered in flour then put them back in the dyeing ingredients. Remove and put back the dry flour and stir - stir again, no need to squeeze enough to stir until the flour wraps the claws.

    • Prepare hot oil, then fry the chicken claws until golden brown over medium heat. Then remove and set aside

  3. Making Geprek Sauce

    • Grind the material coarsely; Red Chili Peppers, Curly Red Chillies, Garlic, Shallots along with Salt, Sugar and MSG. then give the lemon limo juice, stir - stir until blended

    • Heat 100 ml of oil until it is really hot. Then pour it into the geprek sauce while stirring.



  4. Smash the chicken claw

    • Smashed the chicken claw in the mortar, just press it not until it's totally smashed, then pour it with chili sauce and press it again.

Plate and serve!
