  • 300 g green beans

  • Batter:

    200 g wheat flour

  • 3 g salt

  • 2 g baking powder

  • 2 g white pepper powder

  • 300 ml water

  • Salted Egg Sauce:

    6 salted eggs

  • 3 g oyster sauce

  • 12 g curly red chili, thinly sliced

  • 20 g curry leaves

  • 60 g butter

  • 5 g chicken stock powder

  • 100 ml cream

  • 30 g sweet corn kernels, boiled

  • 20 g leek, thinly sliced

Buncis Telur Asin (Salted Egg Green Bean)

Buncis Telur Asin is a unique and delicious way of cooking green beans as it combines the crunchy beans with the mouth watering flavors of salted egg yolk. Perfectly salty and spicy, this is a tasty way for daily intake of fibers and vegetables.

Directions

  1. Prepare the green beans

    • Cut the ends of green beans then wash and set aside.



  2. Prepare the batter

    • In a medium sized bowl , add all the dry batter ingredients while adding in water little at a time, stirring constantly until there are no lumps of flour.



  3. Fry the green beans

    • Heat the cooking oil.

    • Dip the green beans in the batter and fry until golden brown.

  4. Make the salted egg sauce

    • To make the salted egg sauce, separate the egg yolks and mash using a spoon until smooth, and no clumps remain.

    • Prepare a medium-sized pan and heat it to medium. Add butter. When the butter has melted, add the mashed salted egg yolk, and stir until foamy.

    • Add curly red chili slices, sweet corn kernels, and curry leaves. Continue stirring. Add the cream and seasoning next, and cook until the sauce thickens.

  5. Add the fried green beans

    • Once the sauce has thickened, add leek and the fried beans. 

    • Continue stirring gently until everything is well mixed. Remove and set aside.


Plate and Serve!

  • Prepare a Serving Plate, and transfer the Buncis Telur Asin onto the plate.

  • Serve with rice.
