300 g green beans
Batter:
200 g wheat flour
3 g salt
2 g baking powder
2 g white pepper powder
300 ml water
Salted Egg Sauce:
6 salted eggs
3 g oyster sauce
12 g curly red chili, thinly sliced
20 g curry leaves
60 g butter
5 g chicken stock powder
100 ml cream
30 g sweet corn kernels, boiled
20 g leek, thinly sliced
Cooking Oil
Cut the ends of green beans then wash and set aside.
In a medium sized bowl , add all the dry batter ingredients while adding in water little at a time, stirring constantly until there are no lumps of flour.
Heat the cooking oil.
Dip the green beans in the batter and fry until golden brown.
To make the salted egg sauce, separate the egg yolks and mash using a spoon until smooth, and no clumps remain.
Prepare a medium-sized pan and heat it to medium. Add butter. When the butter has melted, add the mashed salted egg yolk, and stir until foamy.
Add curly red chili slices, sweet corn kernels, and curry leaves. Continue stirring. Add the cream and seasoning next, and cook until the sauce thickens.
Prepare a Serving Plate, and transfer the Buncis Telur Asin onto the plate.
Serve with rice.
