    200 g young coconut, grated

  • 100 g oyster mushrooms

  • 50 g basil leaves

  • 100 g anchovies

  • Banana Leaves

  • Toothpicks

    40 g red cayenne pepper

  • 30 g aromatic ginger

  • 7 g turmeric

  • 3 g salt

  • 8 g sugar

Botok Jamur (Oyster Mushroom Botok)

Botok Jamur, or botok with oyster mushrooms is another variation of the simple to prepare, yet delicious Javanese delicacy. It is made with grated coconut dregs mixed with ground spices and seasoning, wrapped in banana leaves and steamed. Give this simple, nutritious, and delicious recipe a try, and you’ll be in for a yummy treat!

Directions

  1. Puree the spices

    • Puree the spices ingredients into a paste, and put it into a bowl.

    Extra cayenne pepper can be added if a spicier Botok is preferred.

  2. Add the ingredients

    • Then add the anchovy, grated coconut, basil and oyster mushrooms. Mix well.

    Other types of mushrooms, like enoki mushrooms or straw mushrooms can also be used for this recipe.

  3. Wrap mixture with banana leaves

    • Take a banana leaf and add around ½ or ⅓  of the mixture in the middle of the leaf and wrap.

    • Fold the ends in and use toothpicks to secure the ends.

    • Do the same for the remainder of the paste mixture.

    This recipe will make 2-3 Botok Jamur wraps.

Plate and Serve!

  • Prepare a serving plate and transfer the Botok Jamur onto the plate. 

  • Serve with rice.
