250g Red Sweet Potatoes
40g Powdered Sugar
7g Baking Powder
1 liter Cooking Oil
To the bowl of sweet potato, add powered sugar, tapioca flour, baking powder and mix evenly until combined.
Take about 30g of dough and shape them up like a ball.
Repeat for all and set aside.
Preheat a litre of oil over medium heat for about 10 minutes.
Once hot, add the sweet potato balls and fry them until they puff up and turn golden brown.
Remove from oil and drain well.
