Bola Bola Ubi (Indonesia Sweet Potato Balls)

Bola-Bola Ubi is a tasty Indonesian snack made out of red or purple sweet potatoes. The sweet potatoes are peeled, steamed and mashed into a smooth paste before they are mixed with powdered sugar and tapioca flour to create the dough. Shaped into balls and fried till golden brown, these bite-sized treats are excellent snacks for afternoon tea with family and friends. Dip them in melted chocolate to further indulge your sweet tooth!

Directions

  1. Mash the Sweet Potato

     
    • Remove the sweet potato skin and steam them for 30 minutes.
    • Place them in a bowl and mash them until smooth.
    • Set aside.
    • Purple Sweet Potato can be replaced with Honey Sweet Potato

  2. Shape The Ball

    • To the bowl of sweet potato, add powered sugar, tapioca flour, baking powder and mix evenly until combined.

    • Take about 30g of dough and shape them up like a ball.

    • Repeat for all and set aside.



  3. Fry The Balls

    • Preheat a litre of oil over medium heat for about 10 minutes.

    • Once hot, add the sweet potato balls and fry them until they puff up and turn golden brown.

    • Remove from oil and drain well.

Plate & Serve!

  • Garnish with a sprinkle of powdered sugar and serve.
  • Can also be enjoyed by adding melted chocolate as a dip.
