  • 500 g chicken thigh

  • Ground spices :

    20 g red cayenne pepper

  • 30 g curly red chili

  • 50 g big red chili

  • 50 g shallots

  • 25 g garlic

  • 15 g turmeric

  • 15 g ginger

  • 15 g candlenut

  • 4 kaffir lime leaves

  • 3 bay leaves

  • 1 lemongrass, crushed

  • 50 ml cooking oil

  • 30 g red tomatoes, diced

  • 200 ml water

  • Seasonings:

    10 g sugar

  • 8 g salt

  • 10 g chicken stock powder

  • 50 g basil

Ayam Garo Rica (Spicy Garo Chicken)

Ayam Garo Rica is a spicy chicken dish from Manado, Sulawesi. Cuisine from this region is famous for being super spicy, and Ayam Garo Rica is no different. The rich aroma, and the heat from the chilies enhance the chicken and the sauce. Steaming rice helps tone down the spiciness of the chilies.

Directions

  1. Prepare the spice paste

    • Puree the ground spices ingredients into a paste.

    • Saute the ground ingredients with lemongrass, kaffir lime leaves, bay leaves and tomatoes in cooking oil over medium heat for about 15 minutes.

  2. Add the chicken

    • Add the chicken thigh and stir to mix well with the spices.

    • Once the chicken is half cooked, add the water and the seasoning.

    • Stir again and cook until the chicken is done, and the sauce is thickened.

    The chicken can be replaced with beef if preferred.

  3. Cook until sauce is reduced

    • After the sauce is reduced, add the basil leaves. Then stir again, dish up and set aside.

    Spring onions can be added to the Garo Rica sauce if an even more oniony flavor is preferred.

Plate and Serve!

  • Prepare a serving plate, arrange the Garo Rica Chicken on the plate and ladle over the sauce with the Garo Rica spices.

  • Garnish with fried onions and serve.
