  • 1 kg chicken, cut into 8 pieces

  • 30 g basil

  • 50 g leek

  • 150 ml thick coconut milk

  • 850 ml water

  • 50 ml oil

  • 14 g fried onions

  • Ground spices:
    25 g shallots

  • 15 g garlic

  • 15 g ginger

  • 15 g turmeric

  • 9 g candlenut

  • 5 g coriander

  • Spices:
    15 g galangal, smashed

  • 2 bay leaves

  • 1 stick lemongrass, smashed

  • Seasoning:
    10 g salt

  • 8 g sugar

  • 17 g chicken powder

  • 3 g white pepper powder

Directions

  1. Prepare the chicken

    • Cut the chicken into 8 pieces.


  2. Blend the spices

    • In a blender, add shallots, garlic, ginger, turmeric, candlenut and coriander. Blend well.

    • In a pan with some oil over medium heat, sauté the blended spices together with galangal, bay leaves, lemongrass until fragrant with oils released. Remove excess oil.

  3. Add the chicken pieces

    • Add the chicken pieces and stir well for about 10 minutes.

    • Add water and coconut milk. Stir well.

    • Add salt, sugar, chicken powder, white pepper and combine well.

    • Cook the chicken further for about 20 minutes and the sauce is reduced.

    • Remove from heat and add in basil leaves. Stir well and set aside.

    Add the chicken pieces


Plate and Serve!

  • Serve with white rice on the side.

  • Sprinkle some fried onions.
