Commonly found in Indonesia, Asinan Rambutan is a savory snack where the rambutan fruit goes through a pickling process, soaking it in a zesty mixture of salt, sugar, kiamboy, chilli and lime. There are many variations of Asinan; besides rambutan, you can add other fruits, like mango and pineapple, as well.

Directions

  1. Prepare the brine

    1. Peel the rambutan and gently wash it.

    2. In a saucepan, add water, salt, sugar and pickled pickles.

    3. Bring it to a boil over medium heat. Remove and set aside.

  2. Making Asinan Rambutan

    1. Add the rambutan fruit, red chilli slices, and lime juice in a bowl.

    2. Pour the brine over the fruits and mix well.

    3. Chill the pickled rambutan in the fridge for at least 1 hour.
