    50 g shallots

  • 20 g garlic

  • 30 g fresh tamarind

  • 1.5 L water

  • Stir-fry spices:

    25 g shallots, thinly sliced

  • 10 g garlic, thinly sliced

  • 1 stick lemongrass, crushed

  • 2 bay leaves

  • 20 ml cooking oil, for sauteing

  • Seasoning:

    15 g brown sugar

  • 5 g sugar

  • 12 g beef stock powder

  • 10 g sweet soy sauce

  • 5 g salt

  • Chilies and vegetables:

    10 g red cayenne pepper

  • 10 g green cayenne pepper

  • 30 g green tomatoes, quartered

  • 30 g red tomatoes, quartered

  • 30 g long beans, cut into 4 cm lengths

  • 20 g fried onions

Asem - Asem Iga Semarang is a sourish beef ribs stew. Directions

  1. Cook the beef

    • Puree the shallots and garlic.

    • Put the paste into a pressure cooker, and add tamarind, ginger, galangal, bay leaves, 1.5 liters of water, and the beef ribs.

    • Pressure cook for 40 minutes.

    Beef ribs can be replaced with beef.

    The level of sourness can be adjusted according to preference.

    Cook the beef


  2. Prepare the broth

    • Once the ribs are cooked, remove the ribs and then strain 1 L of the stewing liquid.

    • In a saucepan, heat the oil to medium, and saute the lemongrass, bay leaf, garlic, and shallots until fragrant and wilted.

    • Add the 1 L of stewing liquid and the seasoning and bring to a boil.


  3. Add the beef ribs

    • Once boiling, add the cooked beef ribs as well as the chillies and vegetables.

    • Stir and cook until chillies and vegetables are cooked.

    • Remove and set aside.
    Add the beef ribs


Plate and Serve!

  • Prepare a serving bowl, then pour the Asem - Asem Iga Semarang into the bowl, garnish with fried onions, and serve.
