  • For cooking rice

    100 g Basmati rice 

    250 ml water for cooking the rice

    5 g Ghee

    2 g salt

     

    For Tawa Pulao

    1 green bell pepper, finely-chopped

    2 tomatoes, finely-chopped

    1 onion, finely-chopped

    10 g ginger-garlic paste (5g ginger + 5g garlic)

    3 g red chili powder

    2 g turmeric powder

    5 g cumin seeds

    20 g butter

    1 carrot, cut into ½ inch cubes 

    50 g green beans, cut into bite-sized pieces

    30 g green peas

    5 g lime juice

    5g salt 

     

    For garnishing:

    few sprigs of fresh coriander

Tawa Pulao (Street Style Spiced Rice)

Tawa Pulao is a popular street food dish that is eaten during dinner all over India. The term Tawa literally translates to a pan, but the vendors of Tawa Pulao have no ordinary pan. They use a cast iron pan that is about 3 feet in diameter! Watching Tawa Pulao being made is a sensory experience and you can get ready for your kitchen to be filled with delicious aromas!

Instructions

  1. Cook the Basmati rice

    • Rinse the Basmati rice under cold running water until the water from the rice starts running clear.
    • Soak the rice in water for about 20 minutes. In a medium pot, add water, Ghee and salt. Bring them to a boil.
    • Add the soaked rice into the boiling water and cook for 6 to 7 minutes.


  2. Boil the vegetables

    • In a medium pot, add water and 2 g salt. Bring them to a boil.
    • Add the carrots to the water and cook for about 4 minutes.
    • Add the green beans and cook for about 2 minutes.
    • Add the green peas and cook for 1 minute.
    • Drain all the vegetables and set aside to cool. The vegetable must be completely cooked but not soft and mushy.


  3. Make the Tawa Pulao

    • In a large pan or skillet, melt the butter. Add the cumin and cook until you hear a crackling sound and the cumin is aromatic.
    • Add the finely-chopped onions and cook until they are translucent, or for about 2 to 3 minutes.
    • Add the ginger-garlic paste and cook until the raw aroma disappears, or for about 2 minutes.
    • Then, add the finely-chopped tomatoes and bell pepper. Stir well.
    • Stir and add turmeric and red chili powder.
    • Stir again and cook the whole mixture for about 3 to 4 minutes.
    • Add the chopped green beans, carrot and peas and season with 3 g salt.
    • Add the cooked Basmati rice and gently mix the veggies with the rice.
    • Sprinkle some lime juice on the Tawa Pulao.

Plate and Serve!

Serve the Tawa Pulao piping hot and garnish with a few sprigs of coriander.
