Ingredients

  • Serves 4 people
  • For Gajar Halwa:

    1 kg carrot, grated finely

    50 g Ghee 

    300 ml milk

    100 g sugar

    50 g Khoya (semi-dried whole milk)

    3 g cardamom powder

     

  • For dry fruits:

    10 cashew nuts, chopped

    10 almonds, chopped

    30 g raisins

Gajar Halwa (Indian Sweet Carrot Pudding)

A winter specialty, Gajar Halwa is a decadent carrot pudding which is a must-have for every Indian wedding. It is flavored with cardamom, and enriched with a generous amount of nuts. One of the reasons why Gajar Halwa is so famous all over India is its rich mouthfeel brought about by the heavily-reduced milk.

Instructions

  1. Prepare the carrots and dry fruits

    • Wash carrots thoroughly in cold water.
    • Peel the carrots, grate finely and keep aside.
    • In a large pot over medium heat, add the Ghee and let it melt completely. 
    • Add the cashew nuts, almonds, and raisins and fry until golden brown. Keep aside
    Prepare the carrots and dry fruits


  2. Cook the carrots in milk

    • In the same pot as the Ghee, add the grated carrot and cook until they start changing color slightly or for about 5 to 6 minutes.
    • Add the milk and stir well. Boil for 10 minutes, stirring occasionally.
    • Continue to boil until the carrots are cooked well and milk is reduced till it thickens or for about 12 to 15 minutes.
    • Once the milk thickens completely, add the sugar. Mix well and cook until the sugar dissolves and thickens.
    • Continue cooking until the Halwa thickens and Ghee is released from the sides, or for about 10 minutes.
    Cook the carrots in milk


  3. Combine ingredients and finish Halwa

    • Turn the flame off and add the Khoya, cardamom powder and the fried dry fruits.
    • Mix well and ensure everything is well-combined.


Plate and Serve!

Serve the Gajar Halwa cold or warm in a bowl. Garnish with the rest of the fried dry fruits.
