Bhutta (Char-Grilled Corn on a Cob)

Bhutta is a crowd-favorite street food snack of all Indians in the monsoon season. In Mumbai, you can usually see Bhutta vendors selling their goods along the beach. One of the main attractions of Bhutta is that it is grilled over a live charcoal flame. Once cooked and nicely charred, it is rubbed with butter, lime juice and red chili powder to enhance the flavors.

Instructions

  1. Prepare and par-cook the corn

    • Peel the corn and make sure there are no corn silks on the cob.
    • In a large pot on a high flame, add 2 litres of water with 15 g of salt.
    • Once the water is at a simmer, add the corn and cook until the kernels are soft or for 6 to 7 minutes. 
    • Remove the corn from the boiling water and set aside to chill.

  2. Prepare the spice mix and lime

    • In a small bowl, mix the red chili powder with a pinch of salt. 
    • Cut the limes in half or in wedges


  3. Chargrill the corn

    • Using a pair of tongs, start charring the corn on an open gas flame until black spots appear evenly over the cob.

Plate and Serve!

Brush the melted butter over the charred corn. Squeeze the lime juice over the butter and sprinkle with the salt and chili powder mixture.
