  • For Amritsari Tawa Machli Marinade:

    500 g fish chunks (cut into 2-inch chunks)

    10 g ginger-garlic paste (5g ginger + 5 g garlic)

    3 g Ajwain (carom seeds)

    5 g red chili powder

    3 g black pepper powder

    3 g Amchur (dry mango powder)

    3 g Garam Masala

    2 g turmeric powder

    5 g lime juice

    10 ml mustard oil

    2 to 3 g salt to taste

     

  • For the Batter:

    60 g Besan (gram flour)

    10 ml mustard oil

    2 g turmeric powder

    3 g red chili powder

    2 g baking soda

    3 g lime juice

    3 g Ajwain (carom seeds)

     

  • For Garnishing and Serving:

    few sprigs of fresh coriander

    1 white onion, thinly-sliced

    2 to 3 lime wedges

    coriander chutney

Amritsari Tawa Machli (Amritsari Style Fried Fish)

Amritsari Tawa Machli is a lip-smacking fried fish snack from Amritsar, India’s northern province of Punjab. Marinated in lime juice and various spices, its best accompaniment is a coriander and mint chutney. Enjoy this fried fish dish with a glass of cold drink!

Instructions

  1. Prepare the fish

    • Rinse the fish chunks under cold water and pat dry.
    • Transfer to a plate and sprinkle with 2 g salt. Set aside.


  2. Marinate the fish and prepare the batter

    • In a large bowl, add the fish followed by all of the ingredients listed under Amritsari Tawa Machli marinade.
    • Coat the fish well on all sides. Transfer to a plate and set aside for frying.
    • In a large bowl, add all the ingredients listed under the batter and whisk well until there are no lumps in the batter.
    Marinate the fish and prepare the batter


  3. Fry the fish

    • In a pan or skillet over medium heat, add oil.
    • Dip the marinated fish in the batter and place the fish onto the hot pan. Make sure that the coating of batter is not too thick as the fish will be uncooked and will give a raw taste to the fish. 
    • Flip the battered pieces of fish once they are golden brown, or after about 3 to 4 minutes on each side
    Fry the fish


Plate and Serve!

Serve the fish hot along with lime wedges, raw onion slices and a few sprigs of coriander. Enjoy the Amritsari Machli with a side of delicious coriander and mint chutney
