  • 1 kg grouper fish (Lapu-lapu) cleaned, gutted and sliced into 5 or 6 pieces 

    1.2 L water 

    150 g ginger, sliced 

    1 large tomato, chopped 

    1 medium-sized onion, sliced 

    1 stalk lemongrass, white part only, pounded 

    50 g leeks, chopped 

    75 ml fish sauce 

    15 to 20 g moringa leaves

Tinola is a Filipino cooking method where a protein such as chicken or seafood is simmered in a broth infused with the flavors of various herbs and spices. Fish Tinola is one of the quickest tinola dishes to prepare due to the shorter time it takes to cook fish. While known to be a delicate dish, the combination of the broth and fish makes it flavorful! Serve hot with rice and you’ll have yourself a comforting, low-calorie meal that’s perfect to start your day with.

Instructions

  1. Cook the broth

    • Pour 1.2L water into a medium-sized casserole, and add sliced ginger, tomato, onion, lemon grass and leeks. 
    • Allow it to boil over medium-high heat for 10 minutes, or until the tomatoes are soft.

  2. Add the fish

    • Add the fish slices into the broth and season it with 75ml fish sauce. Cover the pot with a lid and allow it to simmer over low heat for 15 to 20 minutes.
    • Lastly, add the moringa leaves. Stir and boil for a 10 to 15 seconds.


Plate and Serve!

Pour it into a serving bowl and serve immediately.
