    45ml oil 

    1 large onion, chopped 

    5-6 cloves garlic, minced

    200g cooked/boiled chicken, shredded

    1L chicken broth

There’s corn soup, and then there’s Suam na Mais. While we’re familiar with the creamy version of corn soup, this classic Kapampangan dish gets its distinctive rich and starchy consistency by using the white variant of corn. The glutinous white corn, together with shredded chicken (or shrimp, if that’s what you fancy), is simmered in a chicken broth before moringa leaves are added in. Suam na Mais is one comforting and satisfying soup that you can have during a cold day by itself or with rice.

Instructions

  1. Grate corn

    • Grate 3 pcs white uncooked corn off its cob onto a plate. 
    • Set it aside.

  2. Cook the corn

    • Heat 45 ml cooking oil in a pot over low heat. 
    • Saute the sliced onions, garlic and ginger for 2 minutes. 
    • Next, add 200g shredded chicken and grated corn. Cook for 2 - 3 minutes

  3. Cook the broth

    • Pour 1L chicken broth. 
    • Season with 30ml fish sauce and 3g ground pepper. Allow it to boil and simmer over medium heat for 15 - 20 minutes or until the soup is thick.
    • Add moringa leaves then after a minute, turn off the heat and stir. 
    Cook the broth


Plate and Serve!

Garnish with toasted garlic and serve while hot.
